Have you ever had purple cauliflower? I bought one the other day purely because it was cheaper than regular white cauliflower. And I was wondering what it would look like pureed into babyfood. Tastes pretty much the same as regular cauliflower to be honest. Apparently full of antioxidants – bonus!
I roasted mine with cumin – ground and seeds for good measure. A little inspired by the gorgeous roasted cauliflower recipe we cook ALL THE TIME from Smitten Kitchen, but more of the lazy person’s version (ie no feta yoghurt, pomegranate or mint) but lots of extra cumin, because that’s the way I like it. Even husband was happy and he normally will only eat cauliflower smothered in cheese sauce like he used to be given as a kid.
